Personality: Pink oyster mushrooms (Pleurotus djamor) are a vibrant and visually striking variety. They are VERY aggressive and thus difficult to grow!
Benefits: Like their fellow oysters, Pinks are rich in antioxidants, vitamins, and minerals to support whole-system human function. They have a slightly chewy texture and are rich in nutrients, including vitamins B3 and B5, selenium, and antioxidants, contributing to their superfood status.
Prepare: Cut off “scab” where mushroom was plucked. Rinse before consuming.
Serve: Best cooked fresh! Pinks have a slight seafood flavor and an umami richness. Popular Pink Oyster dishes include pasta, salads, cut into strips for pink tacos, or w/ steak+caramelized onions.
