Lion's Mane

Personality: Lion’s Mane (Hericium erinaceus) is a shaggy, white mushroom with cascading spines called "teeth". Its mild, seafood-like flavor and tender, meaty texture make it unique and memorable.

Benefits: Supports brain health, memory, and focus. Contains compounds that may help nerve growth and cognitive function. Also offers immune support and is rich in antioxidants. 

Prepare: Cut off “scab” where mushroom was plucked. Rinse before consuming.

Serve: Try a “Lion’s Mane Un-Chicken Sandwich”- Slice to filet thickness, bread if desired, then sauté with herbs, salt and butter. Buffalo sauce gives it a little kick!
