Personality: Italian Oyster (Pleurotus pulmonarius) mushrooms have broad, fan-shaped caps and a mild, slightly earthy flavor with a tender bite. Even experienced mushroom eaters gush about the first time they bite into the Italian oyster and feel its pleasing texture.

Benefits: Low in calories, high in protein, B vitamins, and potassium. Supports immune health and is a good meat substitute.

Prepare: Cut off “scab” where mushroom was plucked. Rinse before consuming. Trim stems and separate caps.

Serve: Sauté, grill, or roast for 15 minutes until golden and tender. Add to risotto with peas and parmesan for a creamy, elegant, Italian-inspired dish.
